THE RECIPE

Ingredients

  • 1 pink grapefruit
  • ½ red chili pepper, deseeded
  • 1 sprig of rosemary + extra for garnish
  • 1 full teaspoon of pink peppercorns
  • 2 teaspoons of white granulated sugar
  • ½ teaspoon coarse pink Himalayan salt (or coarse white salt)
  • 4-5cl NONA June
  • 150ml tonic water
  • ice cubes

  1. Thegrapefruitsqueeze. (Do not throw away the squeezed halves yet.)
  2. Thechili halfCut into pieces and together with therosemary sprigCrush lightly in a mortar. Then add to the grapefruit juice and place in a container in the refrigerator for at least an hour.
  3. Thepink peppercornsin a mortar. Thecoarse pink saltand crush again until the salt is a little finer. (The goal is not to get really fine salt and pepper, there should definitely be some texture left!)
  4. TheSugar,Place the pink pepper and salt in a bowl and stir until the ingredients are evenly distributed. Then transfer the mixture to a small plate.
  5. Rub the rims of the glasses with the squeezed grapefruit halves. Now dip the rims of the glasses into the sugar and salt mixture until a nice, crystalline rim forms. Place the glasses in the refrigerator if you are not using them immediately.
  6. Someice cubesinto each glass. (Approx. 3 large ice cubes per mocktail.)grapefruit juiceDivide between both glasses. Now add 4-5clNONA Juneadd.
  7. Fill the remaining glass withtonic waterFill up and garnish with a sprig of rosemary.
